Esta semana o presidente da Ucrânia deu um discurso ao parlamento canadense e durante as falas várias vezes foi usada a expressão: a champion for democracy”, que foi amplamente traduzida para o português na midia brasileira como “campeão da democracia”. Isto está errado né? O sentindo aqui seria mais para “defensor da democracia”, correto?

Olá, Marcio. Sim, ele usou “campeão” com o sentido de “defensor”. Mas procurei aqui no dicionário Houaiss, e parece que pode ter esse sentido também em portugues, veja o significado 2:
2 p.ext. aquele que defende alguém ou uma causa; paladino ‹era o c. do antirracismo›
